Restaurateur Bob Karas just can’t sit still.
Karas, the owner of Karas Restaurant Group—which operates the Village Squire and Rookies restaurant chains, as well as Old Republic in Elgin and Alexander’s Cafe in St. Charles and Elgin—continues to pursue an ambitious growth strategy.
After opening three new Rookies locations in recent years—including transforming the RocHaus theatre in West Dundee into a unique Rookies concept that doubles as a live music venue—and celebrating the 50th anniversary of the flagship Village Squire in West Dundee, Karas is preparing to launch yet another addition to his growing portfolio: Squire Ale House in Campton Hills, set to open in March 2025.
As the name suggests, Squire Ale House will be a fresh take on the traditional Village Squire experience. While keeping many of the signature elements that have made the original brand a success (“Yes, we will have s’mores!!” Karas insists), the new location will have more of a tavern-style feel. It will feature a mix of homegrown, classic, and craft brews, alongside a menu of burgers, ribs, and the Village Squire’s famous broasted chicken. The return of The Lodge’s beloved rotisserie chicken is also in the works.
Karas is teaming up with John Alimissis, a partner at Rookies, and executive chef Mike “NY” Sahin, who has been with the Village Squire South Elgin since its opening in 2005. “We’re excited to bring our new Squire concept to Campton Hills,” Karas says, emphasizing that s’mores and the ever-popular mai tais—a staple at both Village Squire and Rookies—will be on the menu.
Squire Ale House will also feature live music every night, a newly designed outdoor patio, and a gaming room, creating a dynamic and inviting atmosphere for guests.
With construction and final preparations underway, Squire Ale House is on track to welcome guests in March 2025.
